Zesty Parm Asparagus

May is right at the height of asparagus season here in Virginia, so take advantage of these flavorful veggie spears to make tasty starters or sides. For this quick and easy recipe,  you’ll only need to boil the greens for a couple of minutes. This allows you to cook them thoroughly without losing that crisp bite. Once they’re blanched and still hot, toss the asparagus with parmesan cheese, lemon zest, and olive oil.

Trout Amandine

Trout is an ideal fish for dressing up with additional flavors, and this bistro standard takes no time at all. To get started, you’ll need to toast almond slivers in a pan at medium-low heat. As they start to take on a light golden color, set them aside. Dredging the trout in flour will help prevent it from sticking to the pan, which should come up to medium heat before you add olive oil and the fish. The trout should cook for about four minutes skin-side up, then a couple minutes more on the skin until flakey. When the fish comes out, carefully wipe the pan of any remaining oil, then melt butter at medium heat. Sprinkle in chopped parsley and lemon juice, then cook the almonds in the butter briefly so as not to burn the sauce. Promptly spoon the buttery sauce over the trout and serve.

It doesn’t take long to blister the poblanos in the broiler, and they’ll then take about 15 minutes sweating enclosed in a bag to loosen up the charred skin for easy peeling. Ground sirloin makes for a wonderful filling, especially when seasoned with black peppercorns, salt, and garlic. Many cooks like to enhance the filling with nuts, and this recipe calls for roasted pecans and raisins.
